Salad - big bag of mixed salad leaves from woolies - get one of the dearer ones.
Grate 3 carrots, finely dice a whole cucumber, cranberries if you want to get fancy .

Salad dressing - 2 tablespoons of olive oil, 2 tablespoons of rice wine vinegar, 2 teaspoons of whole grain mustard.

Put it all together, takes a huge amount of tossing.
Store it in 3 or 4 sealed plastic jars in the fridge. They stack in really well and keep stuff fresh for a long time.
After 5 days - not even the leaves are limp!!

Add anything to it for meals for the next few days.
poached eggs, fish...........

For dressing i use olive oil with lemon juice from frshly squeezed lemon.

Usually add shallots, tomato, cucumber yellow capsicum maybe some chopped garlic. Sometimes i add Fetta or shaved Parmesan

If i get really fancy i might add a can of tuna canellini beans and some egg for a stand alone dish served with fresh bread.

this sounds a bit bland! but I guess you like it that way so what would I know? some crispy bacon etc would be nice as well--   

You could use cabbage in place of lettuce- you do know this I guess!

Ummm Baron that's what I make. Like ... every second day. 😳

I do the tuna beans and egg about once a fortnight it's nice.

I have been using this olive oil for salads

They ran out of stock so currently using extra virgin and slicing up some garlic to add to it. If i had some chilli i would add a little of that as well. I will be getting some more La Barre in a week.
