So easy and so good.

My best tip is to use the best milk you can buy. I often buy the single herd unhomoginised full fat from Harris Farm. I buy it when it's 1/2 price a day from expiry. The interesting thing is when you turn milk which is near it's use-by date into ricotta, it actually resets the use-by date, but it usually gets eaten in a day.

Ahh....I’m beginning to really like Harris Farm.

My brother/sister in laws shop there. In fact they refuse to shop anywhere else.

Just turned this

into over 1kg of ricotta and reserved the whey liquid which I'll drink later.
