Unlike a souflé, brûlées are easy to make. Now, where are my ramekins?

Can’t find my ramekins. No problem—I will use the Thai bone china coffee cans (cups, Booby) as ramekins. I sort of remember doing that before a long time ago. Well, if the cans crack they are cheap enough to buy on Ebay.

Now I just need to find a blow torch. . .after Christmass.

Hmmm I was bold enough once to try my hand at souffle once or twice, once was OK, second time a flop IIRC.

Mitre10 has a blow torch and spare gas refil for $17. Creme brulee is happening soon!

Muscovado sugar makes a great toffee but the mentally limited can use ordinary white sugar.

Have the stuff to make these but never got around to it.

Not on my current diet list so will wait a while more.
