It is in the curriculum. Teachers have to teach it irrespective of if they agree with it or not. Also, many people can agree with elements of evolution without accepting the whole story. Many people believe that any biological thing will go though subtle changers over time. That doesn't mean they believe that an ant like creature will turn into a flying elephant if you just give it enough time. After all, if we are to believe a few random chemicals over millions of years can turn into a human being, then an ant evolving into a flying elephant really is not impossible.
Just because a teacher teaches it in school does not mean they believe all of it without question.
Evolution is a scientific fact, if you can prove it is wrong then you will become famous.

I said I am not getting involved in the evolution discussion specifically. You made a statement that school teachers teach it as if that some how validates the subject. But even if every single science teacher did not agree with evolution, they would still have to teach it anyway. The fact that they teach it is not evidence of anything when they don't have a choice.
As for Sydney university scientist being all atheist...So what? Are you summoning the Borg with that statement? You asked if I know how science works. I know enough to know that the personal beliefs or non beliefs of the scientific department at one university does not validate anything.
Sometimes it seems as if a persons beliefs mean more than their methods. If an atheist scientist came out and said that water boils at 200C at sea level, while a Christian said 100C at sea level, I swear some people would agree with the atheist. After all, the other person is a Christian. Stupid religious people just have to be wrong about anything scientific, don't they?
Edit: I think there is a bit of a mix up. When you said biology teachers you probably meant University while I took it as high school, hence your latter comment about Sydney uni science department. My mistake if is assumed the wrong thing.
Its hard to get involved with discussing evolution with those who misrepresent or misunderstand evolution, it is easy to tell who has done their homework on this subject.
The National academy of sciences had a survey and only 7% of their members believe in god which is less than 1 in 10 of those surveyed so atheism is rampant in the scientific community.
All the science teachers i know dont believe in religion they accept evolution.

Biology teachers are taught at universities that includes high school teachers.
Why would an atheist scientist claim water boils at 200C when all the evidence suggests otherwise, do scientists reject evidence or accept evidence?
Religious people claim to have debunked evolution yet the truth is they dont even understand it.
