Actually I would argue that ignorance is a huge stumbling block. Just thinking back to my V.C.E studies in Human Development and Nutrition gives me an appreciation of how complex it is to ensure that a human body is receiving all the nutrients required where it is that animal protein is not being consumed. The depth of knowledge required on Nutrition alone is quite significant... then you need to know from which plants to get what nutrients and in what quantities... After doing that subject formally in year twelve, all I learnt is that a healthy vegan diet is complex and should be created in consultation with a Nutritionist. That a comprehensive book on Nutrition is required. That a background in Nutrition is required (equivalent to year 12 so you can know what you are talking about)

Then there is the matter of motivation or the lack thereof... really, it this 'get what you want when you want' world, the idea of striving in knowledge on Nutrition and spending hours in the kitchen creating nutritional food is a low priority for most people.

Actually there are quite a few Olympic athletes who are vegetarian or vegan, so if it was that difficult you'd think that they'd take the easier way out. In fact there is a disproportionate number of Olympic athletes in that category.
