John West mackerel in brine, Choy Sum, onion, ginger and garlic. The Choy Sum was steamed for 2 minutes and then put in the frypan with all the other ingredients for 2 minutes and fried on medium with olive oil.

I've done this before and it was fantastic, so I am going to repeat it tonight. The trick is to make garlic and herbs butter and put it under the chicken skin, which is easy.
