Cooking YOUR way to good Health...
Jan 1st, 2015 at 6:01pm

...

is to easy, cheap and delicious.. you'd wonder how there's so many obese people in the world with diabetes..

...

I just used my soup maker for this one... set it for 35 minutes and 100* ... could have maybe gone to 40 minutes  if you like all of your vegies soft... but for me 35 mins was spot on.. Smiley

but, you can also use a pot on the stove... doesn't matter..

3 medium potatoes
3 carrots
2 celery sticks
1 onion
1 Garlic
4 Button mushrooms
1 can chopped tomatoes
handful of corn
handful of cabbage
1 tsp Mixed Herbes
1 bay leaf
5 to 600ml vegetable stock
salt to your liking - I used French Rivera sea salt
you could also use something like Janes Krazy Mixed salt..

just slice and dice it all up and chuck it in... stir occasionally or if you use a soup maker - stir it up once its done...

once finished, as usual, take out bay leaf..

you're done... the only thing that I peal is the onion

every 7 seconds someone somewhere dies of complications from diabetes.  food (and exercise) is the only answer.

and yet people "refuse" to change their ways...

they are fat and lazy...

its the western way...

they want someone to invent an icecream that just melts off their fat... the more icecream they eat the more weight they lose... the more macca's they eat the more weight they lose...

wake up people... !! you are living in lala land... only YOU can help you...

just look at the sneaky views on this thread.. have a look and sneak away again...

time after time I hear people on this forum wanting to lose weight... I give them the information and the easy way to a better healthier life... but they just "view" and go sneak away hiding behind their computer screens eating some sugar loaded garbage food that came wrapped in a packet full of preservatives, artificial colours and flavours that is literally killing them...

im not saying you can't have some goodies now and again... like xmas... but once again... you should be making all of those goodies yourself... nice and fresh with no preservatives and artificial flavours...

its the best way.. its the only way

I love nothing more than a hearty soup and a crusty bread roll.  Mmmm mmmm.  Great pics Mechanic.

I don't eat junk takeaway ie Maccas, KFC and the like.  I think it not only affects your physical health but your mental health as well.

I don't mind a bit of KFC or Macca's ... once a week on a Saturday night we get takeaway which is usually KFC... I have one box of chips and one chicken Rib piece (the least fattiest and nicest, just ask for it)

mind you, I could eat a TON of KFC if I just went nutz..  Cheesy

but there's no ifs or buts... if you are going to get takeaway that once a week then its only in moderation.. and I tell you what.. you enjoy it immensely.. if you stuff yourself stupid, you only end up feeling full, bloated and as guilty as hell...  Embarrassed

my mum and her sister have type 2 diabetes and all they do is talk about it non stop...
then you'll have lunch with them and after that... out comes the icecreams.... every time!!! Angry

they have all day and nothing to do... complain that they have nothing to do.. but then they wont cook healthy meals... I don't like cooking... like wth  Roll Eyes

you can cook healthy and smart like I have shown in other threads.. cook for the week.. its cheap and healthy... use the "one cup" rule...

I gave mum a bit of a touchup about this obsession with diabetes last time she was here as im sick to death of hearing about it when she's doing NOTHING about it...

then at xmas time - all my family were sitting around and the subject of diabetes came up...  Roll Eyes

then mum yells out from the back of the marquee - "IM NOT ALLOWED TO TALK ABOUT DIABETES WHILE ANDREW'S AROUND!!"

for someone who is deaf and can't hear anything suddenly found her hearing... still a sore point about the talking to I gave her like 6 weeks ago..  Grin

I guess you are lucky that your Mum just talks about her diabetes.

My Mum constantly talks about her bladder and bowels   Shocked

Speaking of diabetics, I have a friend who is diabetic and when she was first diagnosed she went to some diabetic cooking classes run by the dietitian at the local hospital.

She gave me a swathe of recipes that I tweak and sometimes use.  One of the nicest is a chocolate mousse made with honey buzz Yoplait.  It is delicious.

Another trick she learned was to use white beans in mashed potato.  Half and half.  It whips up to be very fluffy, creamy and tasty and you honestly can't tell that it isn't all potato.

have you tried half potatoes and half cauliflower for shepherds pie topping...or even all cauliflower with a sprinkle of cheese....when doing the mash chop some onion finely and add...makes a change....

like the mechanic I feel for you listening to your mums bowel problems.....lucky me I have never had that experience...I just have someone in an aged care home and all he talks about is his medication...riveting......

gawd I hope I never get like that.......................well the family live in hope..

I quite like mashed cauliflower if I can get past the smell cauli tends to have.

The kids would mutiny if I put it on a shepherds pie though.  As it is I have to cover the mashed spuds in cheese for their liking.

I hope I never get like my mother too.  It's sad but it is also VERY frustrating.

they wont notice it if you use equal amounts of each... try cooking cauli in milk...just a thought...cauli is low cal..

yes always the cheese on top.....some put it on first  but I dont think so...have you mixed the cheese with cornflake crumbs to make it more crunchy.

I used to mix the cheese with fresh breadcrumbs but the 'critics' in my house just want cheese on their shepherds pie  ... and more cheese and more cheese.   Roll Eyes

I do a crunchy cheese/breadcrumb mix on top of a crustless chicken pie and a few other things though.

it sounds cool..have you tried dropping spoonfuls of grated cheese on a tray in hot over for about 8.10 min.. and they make crunchy bits for the top of pies...or as a snack.. need to be fullfat cheese though.. none of this lite rubbish which just has cornflower added to it..

I have done cheese 'chips' in the oven using parmesan chese and they are delicious.   You can make nice little patterns.

I haven't tried it with ordinary cheese but I might just give it a go.
