So we went to visit our son down the Peninsula as he had day off work and it was a glorious sunny day. We had lunch in the pub, my son ordered a chicken burger….and I liked the presentation of it! How fascinating with battered onion rings on top on a stick stabbed into the bread roll.. I was not expecting that!

Had some nice Kangaroo meat mixed with fried veges and an assortment of Koori ingredients cooked by Chef Mark Olive today.
It was awesome!

I made myself two chicken schnitzels. I double crumb these so I can get the chicken cooked for sure. I use chicken thigh fillets, juicier than breast fillet but don’t make as regular a schnitzel but so what, the taste is superior!

Some salad on the side.

Home made grave salmon (gravlax)

Salmon, salt and dill, then day and a half later on rye bread with Coopers Sparkling Ale.

Note: I have two recipes for this: 1 traditional viking savage
2 modern civilized.
