Viruses mutate. They do this all the time. New viruses mutate more than well established ones.
A lot of this happens in bats, pangolins and coon dogs. Covid19 likely arose in a coon dog. (not the American type, used to hunt raccoons.)

it has to chemically combine with that membrane in a long series
of organic molecule reactions to get inside the cell.
Coronaviruses before Covid-19 could only attack the mucous cells in the nose, throat and lungs -
and then all of sudden in one go - they learnt how to attack every cell in the human body?
