NSW Police is just lazy. They can check the mobile GPS history and very easy to help the patient to recall where has he/she been.
I have the covid app installed (that gives me the impression) to allow authorities to track my movements and with whom I come into contact. That is assuming that they (other contacts) also have a phone with the covid app. I also do the check-ins with the QR codes.
If the police want to check on my movements around town, they will have to rely on me taking my phone everywhere, which is not the case all the time. I go for a walk most nights without my phone. It would take the police finding security camera footage (and me to confirm myself in the footage) so that they can track my movements.
Other than that, I doubt an infected person would be too social in this day and age to be going to many places inside the week. I could say that my movements would include shopping centres, cinema, and work as places I frequent. The police/covid investigators can track my eftpos purchases for further information about where I have been. But, they would have to have me volunteer that I have been to the bottle shops, seeing that I only purchase alcohol with cash -- I don't want a record on my bank statements.
