The most prominent regional cuisines in China are Anhui, Cantonese, Fujian, Hunan, Jiangsu, Shandong, Szechuan, and Zhejiang. Cantonese cuisine is famous all over the world for its distinctive style. Most dishes are steamed and stir-frying which makes it healthy and non-greasy.

No we Cantonese don't use them in our cooking.
We prefer British heroin dealers and kangaroos.
Stir fried insects are manly used in Thailand. Unlike British they are full of high quality protein.

A lot of actual Chinese food is pretty cr@p. The proliferation of Chinese restaurants in Western countries is not synonymous with serving actual Chinese food, they basically offer a Macdonalds version of Chinese food. Most people in Western countries who say they love Asian food only love the version served in Western countries, thats just a fact. Half the population of Malaysia is of Chinese descent and you wont find traditional Chinese food there either, they had the good sense to create another version after mixing it with traditional Malay called Nonya cooking. Asian countries with a high amount of Western tourism arent dishing up traditional food to the tourists, they quickly learn to offer them Western food.
