Chicken breast and it ended up being the best I've ever made.

Very light brush of oil, garlic salt, into a cold cast iron grill pan oil side down.
Moderate heat until lovely and brown, Another very light brush of oil and into a 180 over until internal temp is 75c.

Light sprinkle of parma cheese then under the grill until melted.

Rest for 5 minutes.
