10. Mushroom sauce

Ready in... 15 mins
We’d never turn our noses up at retro-style grilled mushrooms, but this creamy sauce is a little more refined.

Pour 1 tbsp olive oil into a saucepan over a high heat and add 6 sliced chestnut mushrooms. Fry for 5 mins or until golden, then stir in 1 crushed garlic clove and 2 tbsp brandy. Cook until the brandy has almost totally evaporated, then stir in 4 tbsp double cream and 1 tsp wholegrain mustard. Reduce the heat and bring to a simmer. Cook for 2-3 mins more, then season and serve.

Tonight I'm having quick and easy hoisin pork wraps with mayo, cucumber, greens and crispy shallots.  10 minutes and it's done.

Sorry Bobby but I've already made short work of it.  I had 1 left over from the other night and I just wrapped it up and ate it cold.

I'm having a Drumstick ice cream for dessert.

It's international pizza day today, its a long way to the pizza shop for me so i celebrate by making my own.
Here is the recipie: On pitta bread add everything and on special days like Pizza Day include lots of extra anchovies olives and cheese.

Method: Carefully place pizza on a rack in the middle of the oven on a high heat and heat until done.

Best enjoyed with ice cold beer.
