Well, went to the bulk butcher here.

Yeah, can get (salted) hog gut to make sausages. Yes can get veal (Ha! Hopefully the cow is not the cow equivalent of a great great grandmother!) kidneys.

Hmmm apparently it is hard to find pork in Tassie??? Seems the moslems objected to pigs and other animals being slaughtered in the same abattoir? I would have told them to get farqed myself but hard now to buy pigs to slaughter?

There is a butcher shop about 80Km away, next time I go to or through that place will ask about veal kidneys, fresh hog gut and ribs, shoulder and picnic pork flesh.

Kidneys from mature cows taste too strongly of urine.

There are also nierbroodjes I can make with veal kidneys.
