I wouldn't put up with this from a hosting company if it was on their end.

FD just needs to update his SSL certificate. Why does this take THREE days?

Hostgator have been a bit slack lately, and have not gotten back to me about this issue yet.
I need to renew the hosting at the end of January, so will be shopping around.

Try HostPapa, FD.

Cheaper than Hostgator.

As long as it took me to realise my existing host and DNR service were not helping and not going to help and arranged the registration of the new domain and found a host for the board.

I did not just sit on my arse.

You would think this would be a huge issue for Host Gator with a lot of websites being run through cPanel. Not something they would have sat on as the support emails would have come in thick and fast.

Or is it an SSL certificate issue just for this site?

There must be a way to update the SSL certificate within cPanel.

Here are some directions: support.cpanel.net/hc/en-us/articles/360045647074-SSL-Certificate-Purchase-or-Re
newal

Yep, out of date.

Just needs to be renewed? Or another option would be purchasing a 3rd party certificate from a recognized certificate authority like Sectigo etc.

It is actually as easy as purchasing, then copying and pasting the code into the relevant section of cPanel. Very simple. Actually a 1 minute job once you have the certificate.
