Making bacon

Have some nice pork belly, need to remove the skin.

Have the cure to turn pork into raw bacon.

Have the smoker to cook the bacon.

So, home made bacon soon.

Going to cut some of the raw bacon and put in freezer—have a recipe for Boston Baked Beans that calls for uncooked bacon.

Duncan Henry is a Canadian butcher and has a YouTube channel. Here he is showing how to make bacon:

Posts: 45550 Gender:	Re: Making bacon Reply #4 - Apr 2^nd, 2024 at 3:51pm OK, after removing the skin and getting rid of that via my garbage disposal on 4 legs I weighed the pork belly—928g. Just under a kilo so used 37g of cure, a specific bacon cure. That sits in a ziplock bag in the fridge for 7 days then gets cooked on my smoker. See how it goes.
