How large and how expensive would a generator be to run a large supermarket?

It might not be economic.
At a very rough guess $200K for a 3 phase generator. That is all installed and up and running.
Needs specialist maintenance and regular specialist functional testing.
Multiply that by every woolworths store in Aussie.

They could also have a number of portable generators on the back of large trucks -
that way they could drive to each supermarket that lost power and plug it in.
However they would need the facility to be able to plug in at each supermarket
and that would not be cheap for electricians to install.
They would need a truck within an hour's drive of each supermarket
and drivers on permanent standby - another expense.
