Can’t find my ramekins. No problem—I will use the Thai bone china coffee cans (cups, Booby) as ramekins. I sort of remember doing that before a long time ago. Well, if the cans crack they are cheap enough to buy on Ebay.

Now I just need to find a blow torch. . .after Christmass.

You are thinking of souffles, idiot! I specifically compared the brulee and souffle.

I have made creme brulee several times but I need to buy a blow torch.

Even you could make creme brulee!

Hmmm I was bold enough once to try my hand at souffle once or twice, once was OK, second time a flop IIRC.

Mitre10 has a blow torch and spare gas refil for $17. Creme brulee is happening soon!

Muscovado sugar makes a great toffee but the mentally limited can use ordinary white sugar.
