Star anise chocolate cake

with coffee cream.

Fairly easy to make but you do need 250g of quality chocolate: Cadbury or Nestlé chocolate doesn’t cut the mustard!

Anyway, made one of these and the coffee cream (cream whipped with soft brown sugar (Panela or Muscovado) and two tablespoons expresso coffee.

Made this and took it to the Christmas lunch at a friend’s place. They said they were keeping the remainder of the cake  Grin

Some eggs go in there—I used duck eggs—the whites are firmer. Do that again soon!

Was talking to the lady at the temporary chocolate shop (where I got the duck eggs) about how good duck eggs were and she mentioned they were excellent in fruit cakes: the whites of duck eggs being much less “watery” than chook eggs.

Must remember that when I make a fruitcake in a month or so for winter!

Socks was licking his butt clean after the sound of fireworks made him crap. It was then that Socks noticed that Monk was passed out snoring and his mouth was open with bits of cake around it.
It took but just two seconds for Sock's mind to go from anus to cake to move him into action.
