Moroccan tagines
Dec 31st, 2024 at 8:28am

Somewhere in the moving around the base of my (stoneware) tagine got severely chipped.

Tagines are an earthenware pan with a tall peaked lid traditional in Moroccan cooking.

I am going to throw the base away—doesn’t feel safe putting that on the hob and spilled/boiled over food will turn the big chip disgusting.

Tagines are not cheap! Like $150 each!

I will keep the lid and see if it can fit on a frypan.

I do like Moroccan cooking and once the spice rack is in place will do some every week. Now, Moroccans are muslims and so, officially anyway, do not drink alcohol. So the liquid they add to the tagines is water. I reckon a glass of wine in place of water might improve the already great flavor.
